Understanding the titanium frying pan
Guide
Titanium Cookware: Solid or Coated, the Complete Buying Guide
Titanium cookware covers two very different things: pans whose cooking surface is solid pure titanium, and pans with a non-stick coating merely reinforced with titanium particles. This guide tells them...

01
Choose the right size and shape
Your choice depends on portions, technique and your hob. A 20 cm titanium frying pan suits single portions, eggs and quick breakfasts. A 24 cm pan is the most versatile for two to three servings, while 28 cm is ideal for family searing and larger proteins. Prefer more depth for pan sauces, shallow braises and larger volume cooking: the 24 cm sauté pan gives higher sides and better splash control. For fast stir-fries and tossing, the 24 cm wok concentrates heat and keeps ingredients moving.
All pieces are compatible with induction and all hobs. If you are comparing shapes, start with our guide to choosing a Forneau titanium pan and then refine your selection with tips for matching pan size to your cooking style.
02
What makes pure titanium different
Forneau uses pure titanium with no non-stick coating: nothing to flake and no PFAS. Over time, titanium will show surface marks from utensils and normal use; these remain superficial, with no coating to chip and nothing designed to migrate into food. This is why many shoppers looking for a non toxic frying pan consider uncoated titanium cookware as an alternative to coated aluminium or traditional non-stick.

Use and care for everyday results
Preheat, add fat, then cook: this improves release and browning on an uncoated titanium frying pan. Avoid thermal shock (for example, cold water on a very hot pan). For cleaning, warm water and a non-abrasive sponge is usually enough; for stuck-on residue, simmer water briefly and lift with a wooden utensil. If you want a single do-it-all starter, consider the Signature 24 cm pure titanium frying pan.
FAQ
Your questions, our answers
Is this collection non-stick?
It is uncoated titanium cookware, not a synthetic non-stick coating. With proper preheating and enough fat, release improves and searing is excellent. The water-drop test is explained here: why food sticks.
Will a titanium pan scratch?
Pure titanium will mark on the surface with normal use and utensils. These marks are superficial; nothing peels or flakes because there is no coating.
Are these pans PFAS-free?
Yes. The collection is uncoated and contains no PFAS-based non-stick layer. Details and sources on our Facts & evidence page.
Can I use them on induction?
Yes, all pans in the range are compatible with induction and all hobs, including gas and electric.
What size should I choose?
20 cm for solo portions, 24 cm for everyday versatility, 28 cm for larger meals. Choose the sauté pan for depth and sauces, and the wok for high-heat stir-frying.
