Understanding titanium in the kitchen

Guide

Titanium Cooking Utensils: the Guide (Spatula, Ladle, Tongs, Care)

Choosing titanium cooking utensils means avoiding what silicone, nylon or wood can release under heat, without worrying about marking a coated or a bare pan. This guide explains what each...

Utensils: silicone, nylon, wood, stainless steel, titanium

    • Nylon and plastic: melt against a very hot pan and shed particles
    • Silicone: handles heat better, but ages over time and may contain fillers
    • Wood: pleasant and gentle, porous, splits and isn't dishwasher safe
    • Stainless steel: sturdy, contains nickel, heavier in hand
    • Solid titanium: inert, lightweight, nickel-free, dishwasher safe

A metal utensil will mark a non-stick coated pan. On a bare surface, titanium or stainless steel, marks stay cosmetic.

Why our knife isn't made of titanium

You'll find knives sold as "titanium": either a steel blade coated with a titanium nitride layer, or, more rarely, a solid titanium blade. The latter doesn't rust and won't react to anything, but titanium is softer than cutlery steel: the edge wears off quickly and needs constant sharpening.

So we chose the opposite: a stainless steel blade hardened to 60 ± 2 HRC, which holds its edge, paired with a wood handle. Titanium stays where it performs best, in the utensils and on the cutting board.

  3. 03

    Care and sharpening

The utensils go straight into the dishwasher, no precautions needed. The knife should be hand washed because of its wood handle, then dried; run it over a ceramic or diamond honing steel as soon as the cut starts to drag. Titanium scratches with use: these marks stay on the surface and release nothing.

Frequently asked questions

Your questions, our answers

Is the Forneau knife made of titanium?

No. Its blade is stainless steel hardened to 60 ± 2 HRC and its handle is wood. Titanium is too soft for a blade that needs to hold its edge; we keep it for utensils and cutting boards.

Do titanium utensils scratch pans?

On a coated pan, any metal utensil will leave marks. On a bare titanium or stainless steel surface, marks stay superficial.

Are they dishwasher safe?

The utensils are. The knife should be hand washed, because of its wood handle.

Does titanium contain nickel?

No. Grade 1 titanium contains none, unlike most kitchen stainless steels.

Does the knife need frequent sharpening?

Like any good knife: a pass on a honing steel when the cut starts to drag, and a sharpening stone once or twice a year depending on use.
